The countdown to Miami is officially down to three days! It's my first visit since I was 12, so basically it will be my first time visiting. The only thing I remember from that long ago trip was buying a white blazer that I thought was the coolest clothing item I would ever own...yeah.
This time around I can't wait for four days of relaxing and beach weather. I also plan to eat nothing but fish and tacos. And because I plan to splurge and because I'll be rocking a bikini for several days, I've been working on staying on the healthy track. After I got the flu I started slacking a bit with my workouts, but I'm back on to at least three days a week at Fitness Formula. I have also been working on eating lighter meals and less processed foods.
I can't say how much I love my spiralizer for weeks where I am trying to cut back. This was my first run at sweet potato noodles. With the yummy peanut sauce and the heartiness of the sweet potatoes, I didn't even miss the carbs,
The one thing I'm still working on is making spiralized recipes that stay well for dinner. I've been trying hard to bring dinner to work most nights and some recipes I've found get soggy if I sauce them up. Perhaps I have to keep everything separate but ah, so many containers. What's your favorite go-to lunch or dinner to bring to work? I made my first mason jar salad the other day and that right there may be a game changer. Anything that can fit easily in my bag for when I have to run to breaking news and not have to remember to grab a separate lunch bag is a win. Plus with a mason jar salad I don't have to worry about finding a place to heat something up. For your reference, QuikTrip has a microwave...we make many stops at QT during breaking news runs.
But back to this sweet potato goodness. The recipe was super simple and took no time at all to put together. I also added chicken that was left over in the fridge for some additional protein. If you have 10 minutes, you have 10 minutes to make this recipe!
