I have a confession to make. So as many of you know, I am all about eating and shopping as locally as possible. I write about it here and work on living as locally as possible on a daily basis. You will rarely find me eating a chain restaurant. But there is one exception. Chipotle. I am addicted. (Do you think there's a 12-step program for that?)
First off, it's just so easy during work to stop in and pick up a burrito bowl to-go. Second, it's generally pretty healthy (I get a bowl, no cheese and no sour cream, extra lettuce). But I spend entirely too much money at Chiptole (seriously, I should invest in stock) and the reality is, that giant scoop of rice is not the best when I'm trying to cut back on unnecessary carbs. So say hello to the very "it" vegetable of the moment, cauliflower. You've probably seen lots of blog posts and recipes on cauliflower "rice," heck they even sell it pre-chopped at Trader Joe's now. But I had never tried my hand it! Let me tell you, it's a game changer.
I am not a big rice fan to begin with, give me a bowl of pasta over rice ANY day. But in a burrito bowl it's delicious. So I've been experimenting with making my own version of Chipotle's bowls. None of them are ever as good but this was really delicious. Top it with all your favorite burrito bowls favorites. For this I added roasted onions and peppers, lettuce, homemade salsa, and avocado! I would have definitely added chicken but I was out! Story of my life...but this recipe comes together in such a short time it's perfect for a quick lunch or dinner!
